Barley grass is ranked among the top five herbal supplements in the health and natural foods industry in 2009 by the market research firm SPINS. Touted as “nature’s perfect food,” barley grass is high in antioxidant and nutrient content—an ounce of barley grass contains more naturally occurring nutrients than in an ounce of green vegetables. Although nutrient values vary based on harvesting and processing techniques, barley grass is known to contain at least trace amounts of protein, calcium, iron, potassium, vitamins A, B1, B2, folic acid, B12, C and chlorophyll.
